Oatmeal is usually my breakfast of choice. So many ways to enjoy it. Add some fruit/yogurt/cinnamon/nut butter/yadayadayada.
Everyone knows about the incredible-edible-egg; a nutritionally dense food, high in protein, cholesterol and low in fat. 1-large egg has 70 calories, 4 g fat, 211 mg cholesterol.
When I am trying to lose a few pounds, an egg is a good breakfast. It keeps me satisfied and it is versatile. You can make omelets/scrambles/wraps/yadayadayada.
But what if I'm also trying to watch cholesterol and not spend so many precious points at breakfast? (a large egg=2 points)
My DD switched to egg-beaters several years ago. I was averse to that change. Who knows why!
I recently changed my mind! Check this out:
1 serving is equivilant to 1 large egg, contains 30 calories, 0 g fat, 0 mg cholesterol.
I started using egg-beaters in cakes and other baked goodies instead of incredible-edible-eggs and saved all kinds of calories.
They also make the thinnest omelets, almost like a crepe, the way they pour in the pan!
When I found this tasty looking recipe that was printed in the WW weekly dated Jan 10-16, I had to try it, with a few minor changes, of course!
Spinach-Cheese Frittata the Diva Weigh
1 1/2 cup egg beaters
1 cup chopped spinach
2 TBLS chopped scallion
1/2 cup chopped green chile (or any chile pepper you prefer)
1/4 tsp salt
1/4 tsp pepper
1/2 cup grated low-fat cheddar cheese
Pre-heat oven to 400 degrees.
Spray a 12 inch oven-proof skillet with cooking spray.
Mix everything except the cheese in a bowl.
Pour mixture in skillet and cook over medium heat until partially set, 5 minutes.
Sprinkle 1/2 cup cheese over top.
Put skillet in oven and bake for 5 minutes.
Remove and let stand for 1 minute.
Cut into 8 wedges.
yields 2 wedges per serving
(1 point per serving! the original recipe was 3 points per serving!)
cook 5 minutes on the stove top
cook 5 minutes in the oven
cut into 8 pieces
2 pieces per serving
salsa makes everything better!
yum-O!
This is easy, quick, good!
A good recipe to make and freeze in individual servings for days when you just need something in a hurry!
This makes a good egg sandwich/taco/wrap/yadayadayada.
The possibilities are endless!
There are still incredible-edible-eggs in my frig. Sometimes, you just can't beat a real hard-boiled egg for a snack!
Just when youhoped and prayed thought I would stop torturing treating you to the outrageous lies truth from this post, because it wasn't in the title dammit! here's another;
#5 Once, at Barnes and Noble, I was forced to purchase a book because I took it into the bathroom with me. They didn't want it around the other books anymore
this one wasripped off borrowed from my all-time favorite show-Seinfeld, but it wasn't Barnes and Noble, it was Brentano's and it wasn't me it was George!
Are you an egg-head or an egg-white or egg-beater lover?
Have an egg-straodinary day! yadayadayada!

The frittata looks lovely! What are 'egg beaters'?! I've never seen that product over here (in the UK)...
That looks YUMMY! I am making that this weekend. I alternate between eggs and egg beaters - depends on my mood and what I'm trying to accomplish.
I had a friend ask me once why I bought BOTH eggs and egg beaters. I love baking with egg beaters- and using it in replace of eggs in recipes like that Spinach-Cheese Frittata! YUM! Im gonna make that soon! THX! I also like to make egg salad sandwiches either for breakfast or lunch 1 egg plus just the whites from 2 more eggs. :) WE also stick an egg into my BF lunches for a healthy snack. :) SO I say why not BOTH! Ya can't beat the low points in the egg beaters! :)
This looks fantastic! I think I might just given it a shot!!!
The Kittehs haven't heard from you in a long time >.<
Always enjoy your posts :)
I bake something similar to that (uses cottage cheese, parmesan and cheddar) and it is one of my favorite lunches for work.
Pummeled by all the contradictory health info out that, I have decided to believe that the egg (or other foods actually containing cholesterol) is not responsible for high blood levels of cholesterol.
I believe high levels of blood cholesterol are due to a) genetics and b) the body makes it, and the building blocks are not cholesterol in food, but other components in the food we eat.
Out there somewhere is a study that says that, and that's what I've decided to believe!
Also, when my husband was diagnosed with type 2 diabetes, he had cholesterol level of about 240. Within three months he lowered it to 160 by giving up beer, bread, candy and eating more eggs, beef, cheese.
Disclaimer: I know everyone is different and I also think there is still a lot not known about the mechanisms at work with cholesterol levels!
I'm an egg freak, both egg beaters and the real deal. If I'm going to add another fat (like cheese) to my omelette, I use egg beaters, but if I'm eating them plain (with dry whole wheat toast) I go for the real deal.
Your frittata looks amazing!
Don't have egg beaters in New Zealand .. at least I've never heard of them here.
Anyway I would never use them because I'm a bit of a snob ... don't use artificial, or processed or packaged when there is a perfect natural product. I'm also of the opinion that the current research saying eggs are healthy is more correct that the earlier fears bout cholestrol etc. To me they are one of nature's perfect foods.
I love frittata. So convenient, so many variations and I can eat them. For some weird reason I can no longer eat omelets, scrambled eggs or soft yolks without wanting to throw up.
Enjot your weekend.
A frittata is a type of Italian omelette that frequently features fillings such as meats, cheeses, and vegetables. Like a normal omelette, a frittata is prepared in a skillet.

This looks really good. I love egg and spinach together...yumm-o, for sure.
I've never frittata'd. I think it's time I did.
I printed this recipe off! This sounds fabulous!
That looks delicious! My hubby wouldn't care for it, but I sure would!!
